mushroom barley and beef soup

🍴 Ingredients

    dried porcini mushrooms', 'boiling water', 'cooking spray', 'cremini mushrooms', 'onions', 'carrot', 'celery', 'parsnip', 'garlic cloves', 'olive oil', 'lean stewing beef', 'reduced-sodium beef broth', 'water', 'salt', 'black pepper', 'fresh thyme sprigs', 'barley', 'fresh parsley'

🍳 Directions

place the porcini mushrooms in a medium bowl', 'cover with boiling water', 'cover and let stand 30 minutes or until tender', 'drain mushrooms in a colander over a bowl , reserving liquid', 'chop mushrooms', 'set aside', 'heat a dutch oven over medium-high heat', 'coat pan with cooking spray', 'add cremini mushrooms and chopped onion', 'saut 10 minutes or until lightly browned', 'spoon onion mixture into a medium bowl', 'recoat pan with cooking spray', 'add chopped carrot , celery , parsnip and minced garlic', 'saut 4 minutes or until lightly browned', 'add carrot mixture to onion mixture in a bowl', 'heat oil in pan over medium-high heat', 'add beef', 'cook 3 minutes , browning on all sides', 'add 1c broth to pan , scraping pan to loosen browned bits', 'add remaining 5 cups broth , chopped porcini , porcini liquid , onion mixture , 2 cups water , salt , pepper and thyme', 'bring to a boil', 'cover , reduce heat to medium-low and simmer 1 hour or until beef is just tender', 'discard thyme spring', 'stir in barley', 'cover and cook 30 minutes or until barley is al dente', 'uncover and cook an additional 15 minutes', 'remove from heat', 'sprinkle w / parsley'

    refrigerated biscuits', 'olive oil', 'sweet onion', 'portabella mushroom', 'garlic cloves', 'fresh basil', 'ricotta cheese', 'mozzarella cheese', 'cheddar cheese', 'fresh parmesan cheese', 'pepper', 'salt', 'egg', 'water', 'pizza sauce'

separate biscuits and place them on a large baking sheet lined with parchment paper', 'preheat oven to 400f but do not cook biscuits yet', 'in a frying pan , heat olive oil over medium heat and add onion', 'saute for 10 minutes or until soft and golden', 'add garlic and mushrooms and cook for another 5 to 10 minutes , until mushrooms are soft', 'add basil , stir and remove from heat', 'in a large bowl , combine ricotta , mozzarella and / or cheddar , parmesan cheese , pepper , salt and the egg white', 'stir in mushroom mixture', 'stretch out a biscuit with your hands until it', 's about 4 inches wide', 'place the biscuit in the palm of your hand and add about 2 tablespoons of the filling in the middle , avoiding the edges', 'fold biscuit in half and pinch edges shut', 'place on side on baking sheet and seal the edges with a fork', 'repeat with the rest of the biscuits', 'mix egg yolk with water and stir well', 'brush each calzone with the egg yolk mixture', 'bake for 15 minutes or until lightly browned', 'serve with pizza sauce for dipping if you want to !'

this surprisingly simple, seasonal fall recipe is from chef james smith of the compliments culinary centre at george brown chef school in toronto, canada. i haven't tried it yet, but i thought it would make a lovely appetizer or vegetarian main dish. don't forget to take the phyllo out of the freezer the night before!

💬 Reviews (This is a very tasty recipe. For those that don't want an intense horseradish flavour, just cut back on it by a tsp but don't not try it as it's full of flavour. Since this is winter I cooked the coated tenderloins in a glass baking dish covered with foil for the first 2/3's of cooking time then removed the foil. That browned up the meat nicely and thickened up the resulting sauce from the meat and sauce. Next time I think I'll bring that sauce up to the stove top and add about a 1/2 a cup of dry white wine (pinot grigio or chardonnay). This summer I'll definitely be trying this out on the grill. we love this recipe. it's fast, easy, tastes good, and is healthy. i found it on one of my favorite blogs, cuisinenie (aka nieniedialogues.blogspot.com), but, since cuisinenie is now closed, i thought i'd put this recipe back out there. the amounts of onion, mushrooms, garlic, spinach, vinegar, and cheese are all approximate and should be altered according to your tastes. the recipe is pretty flexible; you can use different types of mustard, cheese, etc.. we like this served with canned progresso lentil soup.

Also as a side note so it does not miss the shopping list, could I suggest that you add the remaining ingredients (sugar, cinnamon & butter)to the main list. Thank you for sharing)

preheat the oven to 200 degrees celsius', 'line 18 muffin holes with paper patty pans', 'whisk the milk , egg and oil in a jug', 'sift the flour into a bowl and add the cheese , basil and mushrooms', 'make a well in the centre and gently pour in milk , egg and oil mix and fold gently to combine', 'divide the mixture between the 18 paper patty pans and top with slices of the extra mushroom', 'bake for 20 to 25 minutes or until a skew inserted through the centre comes out clean', 'transfer to a wire rack to cool'
