brazilian jubilee cookies

🍴 Ingredients

    all-purpose flour', 'instant coffee', 'baking powder', 'salt', 'cinnamon', 'sugar', 'brown sugar', 'shortening', 'egg', 'vanilla', 'brazil nuts', 'milk chocolate kisses'

🍳 Directions

in a large mixer bowl , combine all ingredients , except brazil nuts and chocolate pieces', 'blend well at low speed', 'stir in 1 / 2 cup brazil nuts', 'mix thoroughly', 'chill dough for easier handling', 'shape into balls , using a rounded teaspoon for each', 'place on ungreased cookie sheets', 'bake at 350 for 12 to 15 minutes', 'remove from oven', 'press a candy kiss or 5 chocolate pieces into center of each hot cookie', 'when chocolate has softened , spread to frost', 'sprinkle with remaining chopped nuts'

i got this out of an old pillsbury cookie cookbook. i used to make them every year--they are very good. time for baking, does not include chill time for dough.

💬 Reviews (Uber uber good! I made half the batch (but using two eggs) to make one really very tasty indeed loaf. I left out the nuts because we had a guest who had a nut allergy but we didn't miss them. Though, I am sure they add a whole new level of goodness. I used a granny smith apple. 🍳 Directions

melt butter with flour in saucepan over medium heat', 'add nutmeg , salt and pepper', 'add milk slowly while stirring mixture with a wooden spoon', 'bring sauce to boil and cook 10 minutes', set white sauce aside until it's time to assemble the lasagne, 'brown ground beef in a large sauce pan over high heat with vegetable oil , onion and garlic', 'add tomatoes and water just enough to cook a thick meat sauce', set meat sauce aside until it's time to assemble the lasagne, 'preheat oven to 350f bring four quarts of water to a boil', 'stir in salt then add noodles four at a time and cook uncovered until tender but firm', 'use a large fork or slotted spoon to remove cooked noodles directly to the baking dish', 'spoon meat sauce into baking dish', 'make four layers of noodles , as follows: put first layer of noodles on top of meat sauce', 'then alternate each layer with meat sauce , mozzarella and ham', 'in one of the layers put only white sauce with ham', 'cover lasagne with sauce , grated parmesan and a sprinkle of oregano', 'bake for 20 minutes', 'cover with foil during baking to avoid cheese from burning'

luciana (from curitiba, brazil) taught me this. she grew up with this back home. it's a white lasagne, with ground beef and ham slices. conceptually similar to the familiar red lasagne, but a completely different taste. we loved it.

brazilian leeks

    leeks', 'olive oil', 'unsalted butter', 'salt & freshly ground black pepper', 'balsamic vinegar', 'sugar'

🍳 Directions

sweet balsamic reduction:', 'put the balsamic vinegar and sugar into a small saucepan', 'heat over medium-low heat and stir until the sugar dissolves', 'bring to a simmer and simmer until the vinegar is reduced to 3 or 4 tablespoons', 'it should be the consistency of warmed honey and will have a caramelized sweet-tart flavor', 'this takes approximately 10 minutes', 'leeks:', 'trim the leeks and cut them in half lengthwise', 'under running water , use your fingers to gently pull open the layers of the leeks to rinse away the sand', 'shake the excess water off', 'thinly slice the leeks lengthwise into long , thin strips', 'heat the oil and butter in a large skiller over low heat', 'when the butter has melted , add the leeks', if you can't add all the leeks at one time , add them in batches and use tongs to turn them gently as they cook , bringing the leeks on the bottom of the pan to the top as they reduce in volume -- this will make more room, 'once all of the leeks have been added , cook gently , stirring occasionally until they are soft enough to be twirled on a fork like spaghetti ! this should take approximately 18 to 10 minutes', 'add a little more butter or oil if needed', 'serve , drizzling a little of the reduced balsamic vinegar over each portion'

leeks as a side dish. who knew? these leeks benefit from the slow cooking to bring out their natural sugars. don't cook them too fast or over heat them so they'll burn. slow, gentle heat will produce soft and sweet leeks that you can twirl on your fork like spaghetti! the recipe calls for a sweet balsamic reduction. i've included the directions for that. recipe courtesy of eva longoria.

💬 Reviews (Fantastic bread!!!! This is delicious, loved the apple, nut and cinnamon flavors!! I made 1/2 of the recipe and did use pecans for the nuts. I added some milk to thin out the batter and make up for the 1/2 egg that was missing due to only making 1/2 of the recipe. The baking time was right on for my oven. I had a slice for breakfast with a smear of cream cheese. I then sliced the rest of the loaf up and froze the slices for other morning breakfasts. Thanks for sharing the recipe. place all the ingredients in a blender', 'add 4 cups cold water and blend on high speed until limes are slightly chopped', 'strain into a pitcher and then , with the strainer still resting above the pitcher , slowly pour about 1 more cup water through the strainer over the lime pieces to extract all the residual sugar and juice'

funny title since this recipe uses limes instead of lemons. i found this in my sunset magazine today and decided to post it for zwt 4 . it is important to strain out the lime rinds so the lemonade won't get bitter.

💬 Reviews (I thoroughly enjoyed every morsel of this bread!! My husband loved it too. My KitchenAid had no problem stirring up this wonderful mixture!! I did not put in the raisins but I did put a crumb topping on one of the loaves and kept the other plain. Next time I think I will use the crumb topping and make the other one with a cinnamon and sugar topping. This bread is so easy to make and it tastes wonderful!!! the baptist college i attended my freshman year had a special program where students from brazil could come and study through a missions program. this is a recipe from carolina, one of my best girlfriends. i love it because it's different from other limeade.

💬 Reviews (I just discovered this recipe 3 days ago and have prepared it twice. It is so delicious and it seems the longer it sets, the better and more moist. The apple choices make a difference. The first time I used Golden Delicious and the second, a combo of Rome (a good cooking apple) and also Fugi.)

    lime', 'limes', 'sugar', 'sweetened condensed milk'

🍳 Directions

slice 1 lime thinly to use as garnish on glass rims', 'put any remaining , unused lime pieces , along with all other ingredients , into a blender', 'add 4 cups water and blend , using the pulse function , until the limes are chopped , but not pureed', 'be careful not to overblend as the pith from the lime rind will cause bitterness', 'pour through a strainer into a pitcher or individual glasses', 'add additional water to taste , if needed', 'add ice cubes to pitcher or glasses and serve immediately'

this is just like the limeade at rodizio grill, a brazilian restaurant here in salt lake city. it is very refreshing and tangy.

💬 Reviews (This apple bread was delicious! I made small loaf pans. Made some with raisins and some without. Put a little more cinnamon in. Put some in the freezer to have for later. I think next time I will put some shredded carrots in. Loved it! So simple.)
