preheat oven to 350 degrees', 'spray 1 1 / 2 quart casserole with nonstick cooking spray , set aside', 'cook sausage , stirring to separate , in large skillet over medium heat until no longer pink , drain fat and discard', 'stir together soup , milk , onion , salt and pepper in medium bowl', 'place half of potatoes in prepared casserole', 'top with half of soup mixture , top with half of sausage', 'repeat layers , ending with sausage', 'dot with butter cubes', 'cover pan with foil', 'bake 1 1 / 4 hours or until potatoes are tender', 'uncover , sprinkle with cheese', 'return to oven , bake until cheese is melted and bubbly'

I used sliced provolone cheese, and sprinkled the tomatoes with a little salt and pepper, along with dried oregano and thyme. I spread my bread with butter though. Cannot wait to have these again!)

in heavy skillet , on med heat , cook sausage until browned', 'add celery , onions , and carrots', ', cook and stir for 2 minutes', 'add thyme , basil and salt', 'add flour and stir until mixed', 'slowly add the chicken broth and water , stirring until the mixture comes to a boil', 'add potatoes', 'cover and simmer for 20 minutes , until potatoes are tender', 'puree 2 cups of the soup in a blender ,', 'return the pureed soup to pot and add milk and peas', 'cook until the peas are hot , about 5 minutes'

i modified this from a recipe in taste of home and came up with a very tasty soup. it's a thick comforting bowl!

I had some jarred marinara...after I brushed the outside part of the sammie with the oil/herb mixture, I then brushed the inside with the marinara. Followed the rest of the instructions using mozzerella and provolone for cheese. Used my sandwich maker to grill. This one would be great if you added cooked bacon or added cooked bacon, deli meat and made it into a club sandwich enclosed in gooey cheese. Oh yeah, we'll be doing this one again baby!)

my family's christmas eve food tradition is potato soup for supper. this is my very favorite. made christmas soup by parsley and red pepper; made confetti soup by parsley and minced red, orange, yellow and green peppers; i'll try purple too the next time i make it.

put potatoes in lightly salted water , boil until cooked', 'drop tomatoes into boiling potato water', 'remove tomatoes from boiling water and peel', 'once potatoes have cooked set aside to cool', 'meanwhile heat oil in pan and saut garlic , onion and tomatoes until cooked', 'add the oregano and stir into mix', 'slice the potatoes about inch thick and add to the tomato mixture', 'put combined mix into oven-proof dish', 'dot top with butter and bake in hot oven for about 20 minutes or until potatoes are golden'

this very simple recipe invented by my wife, michelle, is called 'surprise' because i thought 'ok, sauteed potatoes', but then the taste was so much better and out of the ordinary i'm posting it because everyone deserves a chance to try it.
the trick about is that everything but the potatoes seems to disappear into background but the flavours are there to surprise you.
peel the tomatoes the easy way. drop them into boiling water for a 15-20 seconds. run under cold water until cooled enough to handle then skins should nearly fall off.

wash peel , and boil the potatoes-- about three medium ones', 'mash them , and measure out two cups', 'if you are using leftover mashed potatoes , adjust the butter and salt downwards according to how much they already have in them', 'stir in the salt and the butter , then beat in the egg', 'stir in the flour and the baking powder', 'mix well', 'add a little more flour if needed to make a soft but workable dough', 'divide the dough into 8 equal parts', 'roll out each section of the dough to about 1 / 4 thickness on a floured board', 'bake them on a lightly greased griddle or skillet at the same temperature that you would cook pancakes , for about 5 minutes each side', 'they should feel dry but pliable , and have some light brown blisters', 'keep them warm in a damp towel in the oven as they are cooked', 'serve hot', 'if you are cooking them all at once , you probably want to use two skillets', 'leftovers can be reheated in the microwave', 'otherwise , they can be kept raw in the fridge between sheets of waxed paper in a plastic bag'
