one pot lentil chicken

🍴 Ingredients

    vegetable oil', 'bacon', 'chicken thighs', 'onions', 'garlic cloves', 'all-purpose flour', 'tomato paste', 'dry white wine', 'chicken stock', 'green lentils', 'dried thyme', 'chestnut mushrooms', 'salt and pepper'

🍳 Directions

heat the oil in a non-stick wide , shallow pan , add bacon and fry briskly until lightly coloured , then lift on to a plate', 'add the chicken and fry on each side until lightly brown', 'set aside with the bacon', 'stir in the flour and tomato paste , then stir over a low heat for 2-3 minutes', 'add the wine , stock , lentils and thyme', 'bring to the boil , reduce the heat , cover and simmer for 5 minutes', 'stir in the mushrooms', 'add the bacon and chicken , pushing them under the liquid', 'cover and simmer for 30 minutes , or until lentils are tender and the chicken cooked', 'season with salt and pepper'

we often have a glut of mushrooms and potatoes at our house when we haven't been good about cooking from our organic vegetable box. and i never know what to do with aubergines. this recipe from delicious magazine helps us out when that happens. and it tastes darn good too! serve it with rice and/or naan bread.

💬 Reviews (Super good and easy recipe, I did change 2 things. I added more liquid (beef broth) about 2 cups and used brown rice. I added the extra liquid because the rice made it so thick. It has a wonderful chili flavored taste and the brown rice made it good for you too. A great way to get your veggies. Thanks so much for posting!)

bring a large pot of water to a boil and add pasta', 'cook for about five minutes and add the zucchini , corn , carrots and onion', 'cook for another 4 minutes or so , until the pasta is al dente', 'drain the pasta and vegetables and return them to the pot while still warm', 'add the olive oil , warm chicken broth , tomatoes , pesto , parmesan cheese , salt and pepper', 'mix well until the cheese is melted and enjoy'

this is my version of a recipe i found on disneyfamily's website. it's colourful, flavourful, and so easy!!! it's all veggies, but you could definitely add chicken if you like.

💬 Reviews (Good soup, just not what I expected. I followed all the directions and used bell pepper. After it was cooked, it smelled and tasted like stuffed bell peppers! It was good, but not what I was looking for in a spanish rice' flavor. I did add some more water (after I tried it), too thick for my liking and I served it with dollop of sour cream, now that did make it taste more like what I was looking for. I'll make it again because I love soup! But I might add some rotel tomatoes to give it that flavor I am looking for.)

this is a great meal for week nights or when you don't have a lot of time, as it is ready in half an hour. add a green salad and you have a complete meal!

💬 Reviews (I didn't have olives, and I used dried basil, but this was really good! I couldn't leave the leftovers alone! Easy to make too. I added some spinach in the last couple of minutes and served on spinach as well. And I added probably twice as much garlic - but I do that with everything! Thanks for a yummy, new favorite!)
