chocolate mint fudge

🍴 Ingredients

    semi-sweet chocolate chips', 'sweetened condensed milk', 'vanilla extract', confectioner's coating, 'peppermint extract', 'green food coloring'

🍳 Directions

in heavy saucepan over low hear , melt chocolate chips w / 1 cup sweetened condensed milk and vanilla', 'spread half of the mixture into a wax paper-lined 8 or 9 in square pan', 'chill 10 minutes or until firm', 'reserve remaining choloate mixture at room temperature', in another heavy saucepan over low heat , melt white confectioner's piecees with remaining sweetened condensed milk, 'stir in peppermint extract and food coloring', 'spread this mixture on chilled chocolate layer', 'chill 10 minutes longer or until firm', 'spread reserved chocolate mixture over the mint layer', 'chill 2 hours or until firm'

i'm a bit of a sweets addict and this is one of my favorite recipes for fudge.

💬 Reviews (I do like brussel sprouts as they are but this was a nice recipe for a change. (I left out the lemon rind and added just a bit of lemon juice for flavor...I didn't have any lemons.))

    milk', 'instant pistachio pudding mix', 'cool whip', 'mint-flavored creme-filled chocolate sandwich cookies', 'chocolate cookie pie crust', 'semisweet baking chocolate square'

🍳 Directions

pour milk into large bowl', 'add dry pudding mix', 'beat with wire whisk 2 minutes or until well blended', 'gently stir in 1 1 / 2 cups of the whipped topping and the chopped cookies', 'spoon into pie crust', 'spread with remaining 1 / 2 cup whipped topping', 'melt chocolate as directed on package', 'drizzle over pie', 'refrigerate 2 hours or more until firm', 'store leftovers in refrigerator'

this recipe takes only 15 minutes to put together -- great to make on a busy day. cooking time is actually refrigeration time to firm up.

💬 Reviews (It definitely was better than the boiled soggy brussel sprouts that I grew up with. Though I liked it enough to have a large serving, there was still some bitterness to the recipe. Could it be that the spouts were larger? Or, I read in another site that cutting the core out completely will remove the bitterness, would that help? Either way, I would recommend to try this.)

chocolate mint ice cream

🍴 Ingredients

    unsweetened cocoa powder', 'half-and-half', 'heavy cream', 'egg yolks', 'sugar', 'mint extract', 'vanilla extract'

🍳 Directions

place the cocoa powder along with 1 cup of the half-and-half into a medium saucepan over medium heat and whisk to combine', 'add the remaining half-and-half and the heavy cream', 'bring the mixture just to a simmer , stirring occasionally , and remove from the heat', 'in a medium mixing bowl whisk the egg yolks until they lighten in color', 'gradually add the sugar and whisk to combine', 'temper the cream mixture by stirring cream into the eggs and sugar by gradually adding small amounts , until about third of the cream mixture has been added', 'whisk in the remainder and return the entire mixture to the saucepan and place over low heat', 'continue to cook , stirring frequently , until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees f', 'pour the mixture into a container and allow to sit at room temperature to cool for 30 minutes', 'stir in the mint extract and vanilla extract', 'place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid , cover and store for 4 to 8 hours or until the temperature reaches 40 degrees f or below', pour into an ice cream maker and process according to the manufacturer's directions, 'this should take approximately 25 to 35 minutes', 'serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden'

no chips in this chocolate ice cream. made for my son's birthday. his favorite ice cream is chocolate ice cream with mint flavor. he doesn't enjoy the green with chocolate chips.

cookies:', 'preheat oven to 350 degrees f', 'melt over hot water , 1 cup of mint chocolate chips', 'stir until smooth', 'set aside', in a large bowl , combine butter , confectioners' sugar , and egg yolk, 'beat until creamy', 'add melted chips and flour', 'beat until well blended', 'drop by heaping teaspoonfuls onto ungreased cookie sheets', 'bake at 350 degrees f', 'for 8 to 10 minutes', 'allow to stand for 3 minutes before removing from cookie sheets', 'cool completely on wire racks', 'glaze:', 'combine over hot water the remaining 1 / 2 cup of mint-chocolate chips and vegetable shortening', 'stir until chips are melted and mixture is smooth', 'drizzle each cookie with 1 / 2 t of the glaze', 'sprinkle with almonds', 'chill until set', 'stor in airtight container in the refrigerator'

💬 Reviews (I really liked the fruit and nuts done this way. DH like the flavour a lot too but shyed away from it because it was so liquidly. I used dark raisins and organic dried apricots. The only change I made was to use blanched slivered almonds instead of halved because it was what I had on hand. To compensate I soaked them for 15 out of the 45 minutes. The problem I had with this recipe was the fruit and nuts were in a very thin liquid at the end. I think to tweak this recipe to a probable 5 stars would be to simmer the liquid down slightly to a thin syrup. I liked the orange blossom water with this. This was even better chilled. I will try making it again as stated above. Made for Ramadan Tag.)

💬 Reviews (I had to make a few adjustments. I used a variety of dried fruits (apples, cranberries, dates, plums, apricots, and the list goes on), and pistachios because that what I had on hand. I soaked it for about 24 hours. However, I really went crazy, so to speak, when I served it ala mode! WOW talk about tasty! It was good after a 24 hour soak, but two days later it was fabulous. The fruit was very soft and the liquid was nice and syrupy, not too sweet, full of flavor. Fantastic!)
