smokey eggplant aubergine dip

🍴 Ingredients

    aubergines', 'bulb of garlic', 'ground cumin', 'extra virgin olive oil', 'salt', 'fresh ground black pepper'

preheat oven to 200c / 400f / gas mark 6', 'wrap the bulb of garlic in foil and place on a baking tray together with the aubergines , bake for about 45 minutes', 'allow them to cool off slightly when done and cut the aubergines in half', 'using a spoon scoop out the mushy centre of the aubergine and place in a food processor', 'squeeze the garlic out of its skin and add to the aubergine', 'add the oil and cumin and whiz until well combined and smooth', 'season with salt and pepper to taste'

i'm always looking for new ways of using aubergines (aka eggplant). i found this in ideal home magazine. yummy, just don't think about the amount of oil.

smokey grilled corn on the cob with cajun butter

carefully remove the silks from the cornhusks', 'place the corn cobs with the silks removed in a large pot of cold water', 'soak the corn for 1 hour', 'in the meantime prepare the cajun butter , by mixing all of the cajun butter ingredients together , adjusting ingredients to taste)', 'remove the corn from the water and shake off any excess moisture', 'pull husks back gently', 'smear the butter over all sides of the corn', 'pull the husks back over to cover corn', 'place the corn on a baking tray large enough to hold the cobs', 'preheat only one side of the barbecue to 275 degrees or to low temperature', 'leave the other side of the grill off', 'place the corn on the tray onto the side of the grill that has no heat', 'close lid , and cook the corn for about 30 minutes', 'remove from the grill and serve immediately', 'delicious !'

i make this corn with the cajun butter very often in the summer season, after you try this recipe, you will always be making this corn on the grill! low temperature heat on the bbq for about 30 minutes on indirect heat produces the best tender corn, the cajun butter makes this corn so good! don't forget, soak the corn for 1 hour, with the husks on, and only heat up one side of the barbecue for this. double up on the cajun butter if you are making more than 8 corn.

cut chicken in half removing back bone', 'you will be working with two half chickens', 'cut three tbsp of butter off the stick and cut those into a small dice', 'pull back skin on chicken and rub the meat with salt , pepper , and the chopped garlic', 'put the diced butter evenly under the skin and put the skin back in place', 'season the top of the skin with salt and pepper', 'in a small sauce pan melt the remaining butter , honey , liquid smoke and red pepper', 'place chicken in a roasting pan and pour half the butter mixture over the top', 'roast at 375f for 20 minutes then pour the rest of the butter mixture over the chicken', 'continue cooking for about 30 more minutes , basting with the pan juices every 10 minutes', 'make sure the chicken thigh has reached 180f before removing the chicken from the oven'

brown the italian sausage and turkey in large skillet and break into small bite-sized pieces with the spatula , drain fat , put in large pot turned on medium-high', 'drain the liquid from the beans and add beans to the pot', 'add the tomato sauce and rotel , stir well', 'add chili seasoning , italian seasoning , garlic , worchestshire sauce , garlic salt , liquid smoke , red wine and water , stir and heat until simmer', 'add the grated smoked mozzarella cheese , stirring until it is well melted', 'mix the corn starch with either 1 / 4-cup of red wine or with 1 / 4-cup cold water until smooth , then add to the chili and mix well', 'simmer for 20 minutes , stirring occasionally'

i went to two chili cook-off's over the past year. the first one was won by someone who had a smokey flavored chili, the other was won by an italian flavored chili. i decided to make a smokey italian chili and won 1st place in a chili cookoff with it. enjoy.

💬 Reviews (This has to be the best icing I have found on this site. I have made this several times with the butter. I think the recipe is a little confusing about when to add the butter if you are using it, so here's what I do: I soften the butter, then add the sugar and vanilla. Mix that until I get it into almost a dough like consistency, then add the milk, a splash at a time until it is the consistency that I need. It is very yummy. I have used it for cookies and chocolate cupcakes. This is a great recipe! Thank you so much for sharing!!)
