pan roasted winter vegetables

    rutabaga', 'carrot', 'parsnip', 'brussels sprout', 'yams', 'unsalted butter', 'extra virgin olive oil', 'fresh thyme', 'fresh sage', 'nutmeg', 'salt & freshly ground black pepper', 'marsala wine'

🍳 Directions

preheat oven to 450f bring a large pot , 3 / 4 full of salted water to a boil add the rutabagas , carrots and parsnips and simmer until the vegetables give slightly when pierced with a fork , about 4 minutes', 'drain well', 'place all the vegetables in a large roasting pan', 'melt together the butter , oil and herbs , mixing well', 'drizzle over the vegetables and toss to coat evenly', 'season to taste with salt and pepper', 'pour the wine over the bottom of the pan', 'cover tightly with foil', 'bake for 40 minutes', 'remove the foil , toss the vegetables and contiue to bake , uncovered until the wine evaporates and the vegetables can be easily pierced with a knife , 20 to 30 minutes', 'place on a warmed platter and serve at once'

this is a lovely combination of winter vegetables, prepared in a simple and easy way without too much fuss. we love it with roast chicken, and it also goes very good with beef.

    unsalted butter', 'beef steaks', 'dry red wine', 'reduced-sodium beef broth', 'shallots', 'whipping cream'

🍳 Directions

heat a large skillet over medium-high heat', 'add 1 tablespoon of the butter', 'reduce to medium', 'cook steaks about 3 minutes per side or until medium rare', 'transfer steaks to a platter', 'cover with foil to keep warm', 'drain fat from skillet', 'add wine , broth and shallots to the hot skillet', 'using a wire whisk stir and scrape the bottom pan to remove browned bits', 'continue to cook over medium heat about 3 to 4 minutes or until liquid is reduced to about 2 tbls', 'reduce heat to medium low', 'stir in whipping cream , then remaining butter , 1 tbls at a time , whisking until butter is melted and sauce has thinkened slightly', 'season to taste with salt and pepper', 'serve sauce at once over meat', 'makes about 1 / 4 cup sauce'

I loved this recipe and it was a life-saver after my friend had to send her daughter over to my place for her birthday party with 3 hours notice! I piled them up, added some sprinkles and candles, and there you have it, birthday 'cake'! Because we have allergies I tried to find something that wouldn't taste too bad for the others, and they gobbled this one up, even with the wheat and dairy free ingredients. salt & pepper the fish', 'heat a saute pan , add olive oil', 'put fish in pan , presentation side down', 'cook until golden on one side , then turn over', 'add tomatoes , garlic , oregano , fresh basil , 2 oz', 'feta cheese , white wine and the juice of one lemon', 'finish in 400 degree oven for 12-15 minutes', 'take the fish out and finish with butter , a splash of wine and the remaining feta cheese', 'recommend over saffron rice or orzo pasta'

can you say delicious!! this recipe comes from sullivan's metropolitan grill downtown anderson, sc. it has a mediterranean flair with the fresh tomato paired with feta cheese. it is a wonderfully tasty combination that you can’t go wrong with. my husband and & i treat ourselves once a month to this dish.

I added some raspberries to my muffins as a little addition, which I do not regret one bit. I substituted all of the margarine for applesauce as well, and they came out very very yummy.)

    butternut squash', 'onion', 'garlic', 'apple cider', 'chicken stock', 'bosc pears', 'fresh sage', 'allspice', 'parsley', 'kosher salt', 'fresh ground black pepper', 'vegetable oil', 'pecans', 'gorgonzola'

one pan -- in a large skillet , add the oil and saute the onions and garlic first', 'medium heat so they do not burn', 'cook 2-3 minutes and then add in the squash and a little of the apple cider and cook another 5 minutes until they begin to soften', 'fruit -- then add the pears , the rest of the apple cider and maybe a little stock to give the squash and pears moisture', 'cook until the pears begin to soften', 'about 4-5 minutes', 'add the sage , allspice , parsley , salt and pepper to taste and any additional stock if needed', you don't want the dish to burn, 'cook until soft but not mush', 'it varies as to how much stock i use', 'i just have my handy box in the fridge so i can always add a little if needed', 'garnish -- one friend adds crumbled gorgonzola , another pecans', 'i have done either one and even both', they are very good with the dish , but the dish is also good on it's own, 'it is simple , tasty , healthy and just plain good'

easy and healthy .... ok the hardest part is peeling and chopping the butternut squash. but this is a great fall dish. i love this served with a roasted cornish hen and some nutty wild rice on the side. this is really good. my friend tops it with gorgonzola crumbles ... i eat mine as it. that is completely up to you.

🍳 Directions

season chops with salt and pepper and heat the oil in a saute pan', 'once the oil is hot , saute the chops until done', 'remove chops to a platter', 'now for the sauce , to the same pan , add oil and garlic and cook on medium heat until fragrant', 'about 30 seconds', 'stir in the broth , hoisin , vinegar , red pepper flakes and any accumulated juices from the pork platter , scrapping any browned bits and simmer until thickened , about 7 minutes', 'spoon sauce over chops before serving'

    fresh green beans', 'baby red potatoes', 'bacon', 'balsamic vinegar', 'oil'

🍳 Directions

lightly scrub potatoes', 'cut bacon into a small dice and brown in skillet on medium-low heat', 'do not cook to a full crisp', 'while bacon is cooking , slice potatoes into small rounds about 1 / 4 inch think', 'when bacon is done remove with slotted spoon', 'drain skillet of all but 1 tsp bacon fat', 'add oil and increase heat to medium-high', 'add potatoes and toss to coat', 'saute while tossing occasionally until potatoes are slightly cooked', 'approximately 5 minutes', 'add fresh beans and toss lightly', 'cover and reduce heat to medium-low', 'cook for 4 minutes more', 'uncover , add balsamic vinegar & reserved bacon', 'toss and serve immediately'
