lemon pepper flank pinwheels

🍴 Ingredients

    flank steaks', 'burgundy wine', 'cooking oil', 'soy sauce', 'lemon pepper', 'worcestershire sauce', 'bottled hot pepper sauce', 'cherry tomatoes'

🍳 Directions

pound each flank steak to a 10x8 inch rectangle', 'cut each rectangle into four 10x2 strips', 'in bowl , combine burgundy , cooking oil , soy sauce , lemon pepper , worcestershire and pepper sauce', 'place meat strips in plastic bag', 'set in a deep bowl', 'pour wine mixture over meat: close bag', 'marinate 4-6 hours or overnight in refrigerator , turning twice', 'drain meat', 'reserve marinade', 'loosely roll each strip around a cherry tomato or mushroom cap , starting with short side', 'skewer securely with wooden picks', 'grill pinwheels over medium coals for 15 minutes', 'turn meat', 'grill about 10 minutes more for rare', 'baste with marinade often', 'remove picks'

this has been my all time favorite flank steak recipe. i usually make it without pinwheeling (is that a word?). i got this out of a better homes and gardens barbecue cookbook back in the late 70's. here i go again telling my age. cooking time does not include marinating.

lemon pepper focaccia

    bread flour', 'dry yeast', 'water', 'salt', 'virgin olive oil', 'fresh rosemary', 'lemon', 'fresh ground black pepper', 'parmesan cheese'

🍳 Directions

mix all bread ingredients together in a large mixing bowl and knead for 10 minutes', 'allow to rest uncovered for 10 minutes', 'roll out dough on a floured board or between two sheets of parchment paper , to a 14-inch circle of inch thickness', 'place the dough on an oiled baking sheet , or pizza pan , and brush heavily with olive oil', 'evenly powder with the chopped rosemary and pepper', 'place lemon slices evenly over bread in a design', 'cover with a cloth and allow to rise 20 to 25 minutes in a warm area', 'preheat oven to 425 degrees', 'to get the olive oil to stay in place , make light indentations in the bread with your fingers', 'bake at 425 decrees 15 to 20 minutes or until golden brown', 'remove from the oven and brush with more olive oil', 'sprinkle with parmesan cheese'

this foccacia comes from a denver restaurant; unfortunately, i can't remember which one. it has been very popular in our house for some years, and has made for a lot of compliments. my wife takes the lemon off, but likes it anyway

lemon pepper green beans

    lemons', 'black pepper', 'green beans', 'salt'

🍳 Directions

drain the water off of the green beans', 'over medium heat , place the green beans in a large enough saucepan', 'add just enough water to cover half the beans', 'squeeze the juice from all the lemon quarters , getting as much as the juice and pulp out as possible', 'place 4 quarters in the pan with the beans', 'season with black pepper to your taste', 'you can make these as spicy as you like', 'salt to taste', 'cook on med-low heat until beans are heated and tender'

these green beans will put a pucker on your face! they definitely have a whang to them. my uncle don is a very very picky eater and he ate half the pan, so they must be pretty good. you can also adjust the heat to these babies and if you happen to catch canned vegetables on sale (if you're not into canning your own), it's a great way to serve an alternative to plain ole green beans or that mushroom casserole everyone makes at the holidays.

preheat grill to medium high', 'cut cornish hens in half lengthwise', 'wash and pat dry', 'mix garlic powder , lemon pepper seasoning and paprika in a bowl', 'lift up skin and rub meat with seasoning mixture', 'replace skin', 'cook on grill skin side down for 25 minutes , keeping grill lid closed', 'flip and cook for 15 minutes', 'mix lemon juice and olive oil', 'brush on hens , then sprinkle with salt', 'cook for additional 10 minutes , or until internal temperature is 180f'

lemon pepper grilled salmon

    lemon-pepper seasoning', 'extra virgin olive oil', 'fresh garlic cloves', 'salmon fillets', 'lemon', 'fresh parsley'

🍳 Directions

make a paste of the lemon pepper salt , olive oil , and garlic', 'rub some of the paste onto each salmon piece , as much or as little as you prefer to taste', 'cover and chill 20 minutes', 'grill or broil until salmon is cooked through to your liking- it should be just starting to flake and it should look like milk is starting to seep out of the fish', 'the time will vary , especially if you use an outdoor grill , but roughly 7-12 minutes or so is a good guess', 'garnish with a bit of fresh parsley and serve with lemon wedges on the side to squirt on each piece as desired'

i tasted this at one of the taste-test booths in costco when i lived in california. they were promoting their frozen salmon fillets - which are the only frozen fish i have even tasted that i enjoyed (thaw first). this is a really simple, yet tasty recipe for nights when you are too lazy or tired to do much else. you may certainly use fresh salmon, which is what i usually do. the type of salmon fillets you want are the ones cut from the side of the fish into thick strips (as opposed to the horseshoe-shaped type).

    lamb loin chops', 'lemon pepper seasoning', 'oil', 'garlic', 'dry white wine', 'chicken stock', 'lemon juice', 'fresh chives', 'fresh ground pepper'

🍳 Directions

sprinkle the lamb with the seasoning', 'heat the oil in a fry pan and cook the lamb until it is browned on both sides and cooked through', 'remove from the pan and cover and keep warm', 'add the garlic and wine to the frying pan and bring to the boil', 'add the stock and the juice , and bring to the boil again', 'boil uncovered until the liquid is reduced by half', 'stir in the chives and season to taste with freshly ground black pepper'
