this is a great easy marinade for salmon. my sister-in-law made it for us and we all loved it. note that the cooking time depends on the size and thickness of the salmon filet, you will just have to watch carefully. prep time includes marinade time.

when i was a prep-cook at a restaurant in port hardy,b.c. canada, we used to use this dressing as the 'house dressing'. it is a light dressing, not over powering in taste.
💬 Reviews (I made this night before last. I had never used soaked over night beans. I am lazy and last minute and had always resorted to canned. But this time I planned ahead. While the flavors were wonderful the beans were a little tough. However, upon eating the leftovers the next day for lunch I found that this dish was even better. I heated a bowl for lunch and ended up eating spoonfuls cold out of the plastic container with much enjoyment. I must admit that after tasting the finished product I added a bit chicken boullion powder (two teaspoons) The finished product resulted in an enjoyable meal. However, I must warn that the chicken bacame a disturbing grey color. But it you close your eyes it is worth it.)

both sweet and tart served over mixed baby lettuce you'll feel like you're eating at a fancy restaurant. i also like this with fresh sourdough bread. from firehouse food: cooking with san francisco's firefighters. serve this in a salad of greens, dried fruit, and nuts or your favorite salad ingredients. this dressing is emulsified in the blender and can be kept for a week in an airtight container in the refrigerator.
💬 Reviews (We really enjoyed this dish. I did cheat and use canned black beans. I used 2 cans. I wasn't sure if the chicken should be cooked beforehand, and I really prefer shredded chicken to chunks so I roasted a chicken and added the shredded chicken to the recipe at the appropriate time. We also did not have fresh basil so that was eliminated. My husband and I both loved it. We served it with rice. Next day, hubby reheated it and made a wrap out of it with a tortilla. I think the chicken could easily be elimated to make it vegetarian. Rich, hearty comfort food.)
honey fried chicken wings

rinse and dry chicken', 'place wings in shallow dish and pour over the soy sauce , ginger , cilantro , garlic , and lemon juice', 'toss well to coat', 'marinate , refrigerate for 2 hours', 'remove wings from marinade and pat dry', 'season with salt and pepper', 'in a large saute pan over medium to medium-high heat , melt the butter in olive oil', 'when the butter stops foaming , add honey and chicken wings and fry until browned on each side , about 5 minutes', 'continue cooking wings , turning them over often to coat them as the glaze reduces', 'cook until the wings are sticky and cooked through', 'garnish with sesame seeds and serve', 'do not over cook-- the glaze will burn and taste nasty !'

💬 Reviews (I added some sliced serrano peppers for a bit of heat, and the beans were good. Sorry, but the okra and chicken didn't work for me, though. The slices of gray chicken weren't appetizing in appearance, and required using a knife (the rest of the dish didn't), and the texture of the chicken (very firm compared to the other soft ingredients) and okra (mushy/slimy) didn't compliment the rest of the dish. It is a South Beach friendly recipe, and next time I'll leave out the okra and cook the chicken on the side.)

heat oil in a saucepan over medium heat', 'add in onion and saute for about 3-4 minutes', 'add in garlic , paprika and oregano and saute for 1 minute', 'add in all remaining ingredients and simmer uncovered on low heat for 25-30 minutes , stirring occasionally with a wooden spoon', 'season with white salt and black pepper to taste', 'cool to room temperature , cover and refrigerate for 24 hours to blend flavors', 'stir well before using', 'store any leftover sauce tightly covered in the refrigerator'

if you are using this as a tenderizer/marinade then mix in 3 teaspoons powdered meat tenderizer, i use club house brand but any kind will do. plan ahead this must be refrigerated for a minimum of 24 hours before using. if you prefer a sweeter sauce then increase brown sugar to taste, if desired you may adjust all ingredients to suit taste. use 1 tablespoon seasoned salt for this (i use lawry's seasoned salt) and white salt to season at the end of cooking if necessary. this is great on chicken and ribs!
