blackened tilapia

🍴 Ingredients

    tilapia fillets', 'all-purpose flour', 'creole seasoning', 'milk', 'canola oil'

🍳 Directions

place fillets in milk and soak for 30 to 60 minutes in refrigerator', 'meanwhile combine the 1 / 2 cup flour with the creole seasoning', 'mix well', 'when ready , remove fish one at a time and coat with flour mixture , shaking off loose excess before cooking', 'heat non stick pan on medium heat with 1 tbs of oil until rim of pan is hot to touch', 'cook fillet until the they flake easily , roughly about 3 minutes per side', 'sprinkle with desired salt once on plate and enjoy'

excellent balance of flavors and super easy. great flavor without the smoke from high heat blackening. no need to heat a cast iron skillet to surface temps of the sun for this one. you can use your non stick pan on medium. not a true blacken but exceptional flavor just the same. i recommend using emerils essence for the creole seasoning. got this little treasure from a package insert of tilapia fillets.

blackened tofu

🍴 Ingredients

    extra firm tofu', 'butter', 'smoked paprika', 'onion powder', 'garlic powder', 'cayenne', 'white pepper', 'whole black peppercorn', 'dried thyme', 'dried oregano', 'salt', 'unbleached white flour', 'lemon wedge'

🍳 Directions

drain the tofu and cut into 1 / 2 slices', 'drain on wire cookie rack with two heavy pans on top for weight', 'the weight of the pans will help in removing the excess water from the tofu', 'drain at least 30 minutes but up to 45 minutes', 'melt the butter and set aside in shallow dish', 'in coffee mill or food processor , blend all the spices together to a fine powder', 'place the spice mixture on a piece of wax paper', 'stir in the flour with the spices', 'heat some butter in a cast iron skillet on medium to medium-high heat , but do not burn', 'dredge the tofu slices one at a time in the melted butter then in the spice mixture', 'fry tofu slices on one side for five minutes , until blackened but not burnt', 'turn over and fry another 5 minutes until blackened', 'season with salt to taste', 'serve lemon wedges on the side for drizzling', 'makes an ideal appetizer if cut up into strips', 'really tasty with tabasco sauce !', 'red beans and rice would complement this perfectly !'

out of frustration at not finding a decent blackened tofu recipe i made one up, using several recipes online as examples. the trick in frying the tofu is to remove the excess moisture from the tofu first. i always add less thyme-it not being my favorite herb...add more if you wish. oh, this might be a good time to state that this is very spicy! since i've posted this recipe i have actually reduced the amount of pepper.

preheat large , heavy skillet until very hot', 'combine paprika , salt , onion powder , garlic powder , cayenne pepper , white pepper , black pepper , thyme , and oregano in a small bowl', then place it in a shallow plate that's big enough to roll the fish inches, 'dip fillets in melted butter , then in seasoning mixture , and place in hot skillet and cook 2-5 minutes on each side until blackened', 'reheat melted butter to a simmer , and pour in small bowls to use for dipping'

my first time ever cooking trout, altho i've eaten it twice at o'charleys restaurant. delicious, easy, and tasty way to prepare trout.. found this online, but i did list the type of trout i just fixed. the cooking time depends on the thickness of your fillets. also, i've tried this with catfish fillets too, and its just as good.it would work on any of your favorite fish fillets.

blackened tuna bites with cajun mustard

    tuna', 'blackening seasoning', 'olive oil', 'sour cream', 'mayonnaise', 'spicy mustard', 'lemon, juice of', 'horseradish', 'paprika'

make the mustard first: mix all ingredients in a small saucepan', 'bring to a boil , stirring often', when somewhat smooth , it's done, 'now start the tuna: tuna cut up tuna in large bite size pieces coat with blackening seasoning heat oil in pan till very hot , but not smoking sear tuna on all sides for about 7-10 minutes total', 'do not overcook', it's good for the tuna to be slightly pink on the inside, 'serve right away with cajun mustard', 'this can also be made with peeled jumbo shrimp'

preheat oven to 400 deg', 'mix first 7 ingredients in small bowl', 'place steaks on baking sheet , brush on both sides with 1 t', 'oil', 'sprinkle top of each with seasoning', 'heat heavy large skillet over high heat until very hot', 'add remaining 1 t', 'oil', 'swirl to coat', 'place steaks seasoning side down in skillet', 'cook until very brown on bottom return steaks , browned side up to baking sheet', 'place in oven', 'bake until done'

brine the turkey overnight if you wish', 'brush the butter or oil over the breast', 'cover all sides with spice and sliced onion', 'wrap in foil or plastic wrap and refrigerate 24 hours', 'uncover , discard onions', 'bake , uncovered at 350f until internal temp reaches 160f'

a different way to serve turkey. this is not a slow roasted bird! if you are grilliterate, this can be done using the indirect method with a little hickory or mesquite added to the charcoal.

Our turkey was about 13 pounds and I cooked it for just over 4 hours. This is the recipe I will use from now on.)
