better than what? well, better than my old recipe! make sure that you handle the dough as little as possible once the liquid is added. add 1/2 cup of shredded cheese before the buttermilk for a doubly good mix. *later edit* i noticed that folks have different expectations of biscuits so i want to clarify. these are not meant to be crumbly. i do like those kind, but this recipe is more flaky. i am adjusting a few things on here to accommodate things i have learned in the 12 years since i posted this.

good for you and yummy whole wheat blueberry muffins that you can enjoy without the guilt. made solely with whole wheat flour, these muffins deliver not only on taste, but on nutrients such as protein and fiber. i couldn't find whole wheat pastry flour, so i used regular whole wheat flour. i also used 1% organic milk instead of buttermilk. rather than top these with blueberry spread, i used my father-in-law's homemade peach preserves and they were wonderful!!

I made a wheat-free version by using a potato (I cooked and blended it, but adding instant mashed potato flakes would work just as well) as a thickener instead of flour for a roux as called for in the original. I also used plain water instead of chicken broth and flavored it with spices instead - some extra salt, pepper, garlic powder, a tiny bit of celery seed and a little dried basil. It was delicious! I also blended a portion of it to make it perfectly smooth for my kids who hate chunky soups, and the silky texture went over very well. Served with onion-garlic croutons and garnished each bowl with a little bit of additional shredded cheese sprinkled on top.)

i cut this recipe off a cereal box and have kept it for years. i'm glad i did because i can't find it on the box anymore. this is the best bran muffin recipe i have ever tried. everyone loves these. even those that don't like bran muffins. these disappear in my home so i triple the recipe and make 2 dozen large muffins. the recipe calls for all purpose flour but i use mostly whole wheat and just add a bit of all purpose. the original recipe says to bake these at 400 for 20 minutes. my oven would burn them at that temperature so i bake mine at 325 for 20-25 minutes. every oven is different.

i tried this recipe from america test kitchen and these were amazing. the test kitcen perferes kellog's all-bran original cereal in this recipe. dried cranberries or cherries may be substituted for raisins. low fat or non fat yogurt may be substituted for whole milk yogurt though the muffins won't be quite as flavorful.
