melt lard in skillet', 'stir in flour and make a light roux', 'add chile powder , water , and salt', 'cook until kind of thick', 'this is the chili gravy', 'saute onions in a pan', 'cook ground meat in a pan', 'get a pyrex pan and lightly grease them', 'heat oil in a skillet hot', 'when you drop a drop of water in the oil and it spits out of the pan , it is ready', 'using tongs , dip one tortilla in the oil , turn it over , let the oil drip , put it in the chili gravy , turn it over and then put in the pyrex pan', 'put beef , cheese , and onions in the middle and roll , placing flap side down', 'keep rolling tortillas until you still have meat , cheese and onions left to pour over the top of the enchiladas', 'then pour the left over chili gravy over the top', 'preheat oven to 400 degrees', 'put enchiladas in oven for about 15 minutes or all the cheese is bubbly', 'serve right away'

this is an authentic cheese enchilada recipe except for the addition of beef. it takes a while but it is worth it. you won't find flour tortillas in this recipe, that's for sure. that's an abomination. inspired from the only texas cookbook by linda west eckhardt.
💬 Reviews (I made this up before Christmas, put it in cellophane bags and gave it to work colleagues as a gift. Then I made up jars of it for family for Christmas as well. Universally everyone asked me for the recipe because they liked it so much. I finally got around to making some up for us about three weeks ago. (because everyone was raving about it at work) It's been tried on BBQ'd steak and on oven baked chicken wings thuis far at our house. I love it! It is spicy but not hot and adds a wonderful flavour. You can sprinkle it on meats immediately prior to cooking or leave it to marinade for hours before cooking. Im also thinking you could sprinkle chops and other meats with this and then dump then in the freezer until youre ready to cook them. I wish they allowed more than 5 stars because this recipe is a definite keeper and we will make it up again and again.)

preheat oven to 375 degrees', 'in a skillet , brown the ground beef with the onion', 'drain , then add the salt , pepper , and garlic powder', 'mix in the sour cream and mushrooms', 'for the pastry crust , combine the flour , baking powder , and salt in a bowl', 'cut in the shortening until the mixture resembles course meal', 'add the milk , and combine until well moistened', 'press the pastry dough into the bottom of a well greased 8x8 inch cast iron skillet , and about 1 inch up the sides', 'spread the beef and mushroom mixture onto the pastry , and top with cheddar cheese', 'bake for 20-25 minutes , or until the crust is golden brown'

💬 Reviews (Not bad, but still missing something. I only added half the salt and it was still a little salty. Definitely would be a good idea to make this in a smaller amount, as adjustments are necessary.)

this is so easy and one of my dh favorites. i know the mayo may sound a little weird but it holds the meat together well. serve this with yellow rice and enjoy the chicken gravy. this dish is very elegant is presentation.
