Jen's Nine Layer Dip

Jen's Nine Layer Dip

(4.800000191)

🍴 Ingredients

skinless boneless chicken breast halves chopped fresh cilantro vegetable oil lean bacon refried beans taco seasoning mix sour cream shredded Cheddar cheese prepared guacamole diced tomatoes chopped fresh cilantro sliced black olives finely sliced green onions shredded Cheddar cheese

👩🍳 Directions

Prep 30 m Cook 15 m Ready In 45 m Place the chicken, 1 1/2 tablespoons of cilantro, and vegetable oil in a skillet over medium heat, and pan-fry the chicken breasts until lightly golden brown, no longer pink in the middle, and the juices run clear, about 5 minutes per side. Remove the chicken and set aside. When cooled, cut into cubes. Place the bacon in the same skillet, and cook over medium-high heat, stirring often, until evenly browned, about 10 minutes. Mix the refried beans into the skillet with the bacon, and cook, stirring frequently, until the beans are hot and bubbling, 5 to 10 minutes. Mix the taco seasoning and sour cream together in a bowl. To assemble, spread the hot bean and bacon mixture into the bottom of an 8x8-inch glass dish. Sprinkle the chicken cubes over the bean mixture, then follow with these layers: 3/4 cup of Cheddar cheese, guacamole, sour cream mixture, and sliced tomatoes. Sprinkle the top with 1 1/2 tablespoons of cilantro, black olives, green onions, and 1/4 cup of shredded cheddar cheese

💬 Reviews (This is my dip and although I am so excited to have it listed on Allrecipes, I have to add that it was edited a bit. All of the changes were minor and do not change the dip, except two: I cook the chicken and then mix it up with the cilantro and that I like to add tortilla chips sticking out around the edge of the dip and more on the side for serving. Hope that helps and you enjoy it!')

Bacon Bourbon Apple Pancakes

Bacon Bourbon Apple Pancakes

(4.800000191)

🍴 Ingredients

canola oil diced apples white sugar divided ground cinnamon milk melted butter egg bourbon whiskey vanilla extract all-purpose flour oat flour baking powder salt chopped cooked bacon

👩🍳 Directions

Prep 15 m Cook 20 m Ready In 35 m Heat 1 teaspoon canola oil in a skillet over medium heat; cook and stir apples, 1 tablespoon sugar, and cinnamon in the hot oil until apples are slightly softened, 5 to 10 minutes. Remove skillet from heat. Whisk milk, butter, egg, bourbon, and vanilla extract together in a bowl. Sift all-purpose flour, oat flour, 1 tablespoon sugar, baking powder, and salt together in a separate bowl. Stir flour mixture into milk mixture until batter is well mixed; fold in apples and bacon. Heat remaining 1 teaspoon canola oil in a skillet over medium heat; drop batter, about 1/2 cup per pancake, onto the griddle, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip pancake and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter

💬 Reviews (Really delicious! A little more effort than we usually go to, with apple chopping and bacon cooking, but well worth it. We found that the batter was a bit thinner than we like, so we did add some flour to thicken it up. There is just a hint of the bourbon flavour, and a bit more bacon was added - used two full strips which, when chopped up, yields a bit more than the recipe calls for.')

Bacon-Wrapped Leg of Lamb with Red Wine Reduction

Bacon-Wrapped Leg of Lamb with Red Wine Reduction

(4.800000191)

🍴 Ingredients

leg of lamb garlic olive oil lemon juice minced fresh rosemary bacon small onion dry red wine beef stock tomato paste salt and ground black pepper to taste

👩🍳 Directions

Prep 20 m Cook 1 h 40 m Ready In 2 h 30 m Trim excess fat and thin membrane from leg of lamb; place into roasting pan. Cut slits in the meat and insert garlic slivers into slits. Mix olive oil, lemon juice, and rosemary in a small bowl; brush mixture over lamb. Lay bacon slices onto the meat. Let roast stand at room temperature for 30 minutes. Preheat oven to 325 degrees F (165 degrees C). Roast lamb in the preheated oven until an instant-read meat thermometer inserted into the thickest part of the leg, not touching bone, reads 145 degrees F (65 degrees C) for medium-rare or 160 degrees F (70 degrees C) for medium, 1 1/2 to 1 3/4 hours. Transfer lamb to a serving platter, cover loosely with aluminum foil, and let stand while you make the sauce. Skim and discard excess grease from pan drippings left in roasting pan; place roasting pan over medium heat. Cook and stir onion in drippings until translucent, about 5 minutes; pour in wine. Stir wine and pan drippings, scraping up and dissolving brown bits of food stuck on the bottom of the pan. Pour in stock, bring sauce to a boil, and reduce heat to low. Stir tomato paste into sauce, bring to a simmer, and cook until sauce has reduced to about 1 cup. Season with salt and black pepper. For a smoother sauce, strain before serving

💬 Reviews (This was extremely easy to make and turned out perfectly. I ended up combining garlic, onions, lemon, olive oil and dried rosemary then pulsing it in the blender and spreading it under the bacon before cooking. I also put extra garlic slivers in the leg of lamb. Huge hit. I omitted the tomato paste from the sauce and it came out as delicious "jus". Excellent.')

Chicken Cacciatore II

Chicken Cacciatore II

(4.800000191)

🍴 Ingredients

chickens each cut into 8 pieces salt and ground black pepper to taste all-purpose flour olive oil yellow onion large green bell pepper garlic white button mushrooms quartered chopped fresh oregano peeled tomatoes in juice coarsely chopped tomato paste white wine chicken stock capers drained and rinsed coarsely chopped fresh basil

👩🍳 Directions

Prep 30 m Cook 55 m Ready In 1 h 25 m Season the chicken pieces with salt and black pepper. Place the flour in a shallow bowl. Press each chicken piece into the flour and tap off excess. Heat the olive oil in a large Dutch oven over medium heat until almost smoking hot. Pan-fry the chicken until golden brown on both sides, about 3 minutes per side. Work in batches so as to not overcrowd the pan. Set the browned chicken aside. Stir the onion, green bell pepper, and garlic into the Dutch oven; cook, stirring occasionally, until tender, about 5 minutes. Stir in the mushroom; cook until they release their juice, 5 to 8 more minutes. Mix in oregano, tomatoes, tomato paste, white wine, and chicken stock; bring to a boil. Return the chicken pieces to the sauce, cover the pan, reduce heat to medium-low, and simmer until the chicken is no longer pink inside and the juices run clear, 30 to 40 minutes. Stir in capers and sprinkle with basil to serve

💬 Reviews (my husband liked this more than anything Ive ever made! I added 1 jalepeno pepper, and used only fresh cherry tomatoes (nothing canned) Also I used a LOT of pepper, and no salt. Next time Ill try a few green olives as well.')
